I am so looking forward to this weekend. The Camping Club (or the majority of it) has planned a fall foliage excursion. We'll be staying with Mountain Man at the Greene home in West Jefferson. I plan to leave Friday morning, as I have an appointment at 11:00. After that, I'll go grocery shopping to prepare the Friday night supper for the club. As of right now, the meal plan is stewed potatoes, pinto beans, cornbread and fried chicken. Of course, something chocolate for dessert would be nice, too. All of those foods are okay for diabetics, right? On Saturday, the plan is to drive down to Mount Mitchell and have a picnic at the summit. Becky has requested to stop in Spruce Pine to try to pick up either some KFC or Bojangle's (just so it's chicken). Hopefully the Mount Mitchell campground will be open this time. On the way back to WJ, the plan is to tour the Black Mountain Campground and the Carolina Hemlock campground. I just know that the club will be just as impressed as I was. I'm hoping that Katy will give me a crash course in how to use her digital camera. This weekend is supposed to be "peak" for beautiful scenery. On Sunday morning, I have invited the Campers to attend church with us at Obids Baptist Church in West Jefferson. I'm so looking forward to a relaxing weekend with friends and family.
